Professional Artisan Gelato Making Course Objective & Outline:

This professional artisan gelato making course hosted by The Coffee Scent is an in-depth gelato class design for participants to understand the concept and subject knowledge of gelato technology. From this course, participants will gain the skills to create their own artisanal gelato recipes and balancing of the recipe to make Gelato from scratch using raw ingredients. 

 

This course gives you the full knowledge you need to start a Gelato business.

 

Day 1

Session I:

  1. Sorbet base formulation
    • Solid, anti-freezing power and sweetness calculations
    • Fruits selection
    • Liqueur sorbet
    • Recipe Creation
  2. Sherbet base formulation
    • Solid, anti-freezing power and sweetness calculations
    • Fruits selection
    • Recipe Creation
  3. Pasteurization & ageing

Session II:

  1. Ingredients & mixing tools preparation
  2. Hands-on 3 recipes of Sorbet & Sherbet recipes creation on that day

Session III

  1. Gelato white base formulation
    • Sugar, fats, solids, non-fat milk solids, anti-freezing power, and sweetness calculations
    • Recipe Creation
  1. Gelato yellow base formulation
    • Sugar, fats, solids, non-fat milk solids, anti-freezing power, and sweetness calculations
    • Recipe Creation

1 tub each of Sorbet & Sherbet per participant

 

Day 2

Session I:

  1. Gelato in Asia – how to make the gelato for the Asia customer
  2. Ingredients & mixing tools preparation

Session II:

  1. Hands-on 4 recipes of Gelato recipes prepared on day 1
  2. Gelato business presentation
    • Costing and profitability in Asia countries
